Stéphane Dief started Clos Manou in 1998. From the get-go, his focus was on the best possible vineyard and cellar work. All vineyards are planted at high-density with a minimum of 10,000 vines per hectare and only massale selections from Bérillon and their own little parcel of pre-phylloxeric vines are used for any replanting. The domaine’s surface grew from 0.12 ha parcel to 18.5 ha vineyard holdings today that encompass the finest terroirs in St - Christoly.

Vineyard work ais only done by hand. All their treatments are organic unless exceptional circumstances occur. Their primary objective remains above all to obtain the best possible quality of grapes.

As far as winemaking is concerned, thoughtful, artisanal and precise winemaking techniques are used in various vessels, depends on grape varieties, vintage conditions, etc. The results of Dief’s fastidious methods are consistently brilliant and deserve to be far better known.
